So you may have conjectured that we have had to find a lot of different kohlrabi recipes to keep ourselves interested in the little buggers. This is one that is easy and delicious and snacky. If you can find a kohlrabi at your farmer's market (or neighbor's backyard--shhh), try it out!
Kohlrabi Pickles
1 or 2 kohlrabis* pinch of salt pinch of sugar cider vinegar
Peel and cut the kohlrabis into bite-size chunks. Place in a jar or container with tight-fitting lid. Add salt and sugar and cover half-way with vinegar. Shake shake shake. Leave in refrigerator for about an hour, shaking once or twice in that time to redistribute vinegar. Drain vinegar off and enjoy!
These stay crunchy crunchy crunchy and are a cool and tasty snack on a hot afternoon. Or they would substitute nicely for chips or coleslaw with a burger.
*You could probably substitute jicama for the kohlrabi and have similarly delicious results.
